Your Purpose
The Executive Chef leads and oversees all onboard culinary operations, ensuring efficiency, quality, and compliance with corporate standards while serving as the key link between the corporate office and vessel teams. This role also drives team development by mentoring culinary talent and fostering a culture of continuous improvement and innovation across the fleet.
Your Impact
Operational Responsibilities
- Provide strategic culinary leadership across the fleet, aligning operations with brand philosophy and ensuring continuous improvement in food quality, presentation, and consistency.
- Oversee and standardize fleet-wide culinary operations, including recipe and menu development, quality assurance, adherence to best practices, and implementation of control measures.
- Conduct regular ship visits and onboard audits, evaluating all venues and ensuring compliance with operational standards, galley procedures, and culinary excellence.
- Collaborate with shipboard and corporate teams to coordinate initiatives, support menu implementations, review recipe programs, and maintain efficient communication and execution.
- Support operational flexibility and resource management, including familiarity with premium products, assisting in inventory reviews, and stepping into culinary leadership roles as needed.
Guest Experience & Quality Assurance
- Ensure an exceptional luxury guest dining experience by leading restaurant operations, engaging in culinary programs, performing demonstrations, and proactively responding to guest feedback and NPS metrics.
- Maintain the highest standards of food safety and hygiene through active involvement in health protocols, training, inspections, and compliance with USPH and global standards.
- Oversee quality assurance across the supply chain, including product loading, provision reviews, and reporting discrepancies to uphold brand standards.
- Drive F&B profitability through cost control, resource planning, and continuous improvement to exceed financial targets.
- Conduct operational reviews, participate in key meetings, and submit objective performance reports aligned with global standards.
Leadership
- Lead the development and delivery of comprehensive fleet-wide training programs that uphold brand standards, support staff development, and build a strong pipeline of future culinary leaders through ongoing mentorship and succession planning.
- Foster a high-performance culture by driving fair leadership practices, overseeing talent development and reviews, and collaborating with HR on rotations, performance, and career growth.
Your Journey so far
- Minimum of 15 years in high-end galley operation, advanced culinary skills.
- At least 5 years in senior leadership roles within the cruise industry.
- Proven experience in world-renowned luxury hospitality environments, in Michelin-starred establishments.
- Proven leader with a dynamic style, skilled in building and motivating multicultural teams; excellent communicator fluent in English.
- Proficient in Microsoft Office and industry systems, with solid knowledge of HR protocols, Time & Attendance compliance, and MLC regulations.
- Expert in luxury food operations, hospitality standards, and enforcing global safety and health compliance.
Strategic, detail-oriented, and guest-focused professional with strong cross-functional collaboration and business acumen.
